{"id":1178,"date":"2021-02-05T21:00:04","date_gmt":"2021-02-05T21:00:04","guid":{"rendered":"http:\/\/grandmaingrids.com\/frommykitchen\/?p=1178"},"modified":"2021-02-05T21:00:04","modified_gmt":"2021-02-05T21:00:04","slug":"chicken-marsala-garlic-mashed-potatoes","status":"publish","type":"post","link":"https:\/\/grandmaingrids.com\/frommykitchen\/index.php\/2021\/02\/05\/chicken-marsala-garlic-mashed-potatoes\/","title":{"rendered":"Chicken Marsala &#038; Garlic Mashed Potatoes"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\"><strong>Ingredients <\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>4 Boneless, skinless chicken breast halves or thighs<\/li><li>1 small onion diced<\/li><li>2 cloves garlic diced<\/li><li>\u00bd pound fresh mushrooms<\/li><li>2 eggs<\/li><li>3 Tablespoons of Flour<\/li><li>Seasoning to taste<\/li><li>4 Tablespoons of butter<\/li><li>1 Tablespoon of oil<\/li><li>3 Tablespoons of Marsala wine (dry)<\/li><li>2 Cups of beef broth or chicken broth<\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\"><li>Pound chicken breasts from center out to a \u00bd inch thickness<\/li><li>Peel and chop the onion and garlic.\u00a0 Wash, pat dry and slice the mushrooms.<\/li><li>Lightly beat the eggs in a shallow bowl.\u00a0 Put the flour in another shallow bowl and season to taste.\u00a0 Dip the chicken breasts in the egg, then dredge them in the flour, shaking off any excess.<\/li><li>Melt 2 Tablespoons of the butter with the oil in a large skillet.\u00a0 Cook the chicken until it is lightly browned, about 4 minutes per side.\u00a0 Remove the chicken and keep it warm.<\/li><li>Add the onion, garlic and mushrooms and saut\u00e9 until they are lightly browned, 3 to 5 minutes.\u00a0 Return the chicken to the skillet and stir in the Marsala (de glaze the pan, stir to get up all the little goody bits on the bottom) and then add the Beef broth.\u00a0 Bring the mixture to a boil, reduce about one-third, about 4-6 minutes.<\/li><li>Whisk the remaining butter into the marsala mixture until well blended.<\/li><li>Serve with mashed potatoes, buttered noodles or rice.\u00a0 Asparagus and a green Salad make a great combination, don\u2019t forget the bread.<\/li><\/ol>\n\n\n\n<h5 class=\"has-text-align-center wp-block-heading\"><strong>Garlic Mashed Potatoes<\/strong><\/h5>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients <\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>2 1\/2 pounds of small read potatoes <\/li><li>5 cloves of crushed garlic<\/li><li>1 tablespoon chicken bullion <\/li><li>water to cover potatoes<\/li><li>salt and pepper to taste<\/li><li>4 ounces cream cheese<\/li><li>1\/4 cup of butter <\/li><li>1\/4 cup heavy cream (or milk)<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Wash and quarter potatoes add garlic and chicken bullion. Cover potatoes with water and boil until a potato will slide off a knife when poked approx 30 minutes.  Drain water and save it for your gravy.  To hot potatoes add butter, cream cheese, heavy cream and pepper to season.  Mash potatoes to the consistency you like.  Taste for seasoning add salt if needed.  If you are doing a head of time put in a crock pot and put on keep warm.
