{"id":329,"date":"2020-05-15T17:16:24","date_gmt":"2020-05-15T17:16:24","guid":{"rendered":"http:\/\/grandmaingrids.com\/frommykitchen\/?p=329"},"modified":"2020-05-29T17:30:21","modified_gmt":"2020-05-29T17:30:21","slug":"twice-baked-potato-shepherds-pie","status":"publish","type":"post","link":"https:\/\/grandmaingrids.com\/frommykitchen\/index.php\/2020\/05\/15\/twice-baked-potato-shepherds-pie\/","title":{"rendered":"Twice Baked Potato Shepherds Pie"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients <\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>3 Russet Potatoes<\/li><li>\u00bd pound of ground meat<\/li><li>2 tablespoons of olive oil<\/li><li>1 small onion diced<\/li><li>\u00bd cup of chopped bell peppers<\/li><li>1 cup frozen mixed vegetables<\/li><li>1 10 oz can of diced tomatoes<\/li><li>2 cups shredded cheese divided<\/li><li>2 tablespoons of butter<\/li><li>2 tablespoons of cream cheese<\/li><li>\u00bc cup of sour cream<\/li><li>1 teaspoon of paprika<\/li><li>2 teaspoon of salt<\/li><li>2 teaspoon of pepper<\/li><li>2 teaspoon of Krista seasoning<\/li><li>1 tablespoon of chives<\/li><li>1 cup of beef broth<\/li><li>1 tablespoon of cornstarch<\/li><li>2 tablespoons of cold water<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<p>Wash potatoes and poke with a fork. Bake in the microwave for 9-10 minutes or in the oven at 375 \u2109 for around 1 hour. When cool enough to handle but still warm. Slice potato in half length wise and scrape out potatoes into a bowl. Mash potatoes with butter, sour cream, cream cheese, paprika, chives, and 1 teaspoon each of salt, pepper Krista seasoning, and 1 cup of cheese, stir and set aside.<br>In a frying pan add olive oil and cook meat until brown, add onion, peppers and remaining seasoning. Add in tomatoes and frozen mixed vegetables.<br>In a small cup or bowl mix cornstarch and cold water to make a slurry. Pour broth into meat mixture and get really hot then add in cornstarch slurry. Bring mixture to a boil to thicken.<br>Put some cheese in the bottom of each potato, then add meat mixture, then add the potatoes and top with cheese and chives. Put in a preheated oven at 350 \u2109 for about 20 minutes until hot and melting. If potatoes are cold or frozen they will take longer.
