{"id":416,"date":"2020-06-10T16:52:32","date_gmt":"2020-06-10T16:52:32","guid":{"rendered":"http:\/\/grandmaingrids.com\/frommykitchen\/?p=416"},"modified":"2020-06-10T16:52:32","modified_gmt":"2020-06-10T16:52:32","slug":"meat-and-potato-quiche","status":"publish","type":"post","link":"https:\/\/grandmaingrids.com\/frommykitchen\/index.php\/2020\/06\/10\/meat-and-potato-quiche\/","title":{"rendered":"Meat and Potato Quiche"},"content":{"rendered":"\n<p>Serves 4-5<br>425\u2109<br>20min.\/30 min.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients <\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>3 Tablespoons of vegetable\/or olive oil<\/li><li>3 cups of coarsely shredded raw potatoes (you can use frozen hash browns, best if thawed first)<\/li><li>Salt and pepper<\/li><li>1 Cup grated cheese of your choice, or combinations of cheeses<\/li><li>\u00be to 1 cup meat of your choice (ham, browned sausage, diced chicken)<\/li><li>Or all vegetables, sun dried tomatoes, artichokes, grated squash, olives, mushrooms etc)<\/li><li>\u00bc cup of chopped onions<\/li><li>\u00bc cup of sliced mushrooms (opt.)<\/li><li>Chopped peppers (opt.)<\/li><li>Diced Ortega chilies (opt.)<\/li><li>1 Cup of evaporated milk or heavy cream<\/li><li>3 eggs<\/li><li>Salt and pepper, parsley<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions <\/h2>\n\n\n\n<p>Mix together:<br>Vegetable\/or olive oil and coarsely shredded raw potatoes (you can use frozen hash browns, best if thawed first) Salt and pepper<br>Press evenly into pie crust shape, in a 9 or 10 \u201c pie pan,<br>Bake at 425\u2109 for 20-30 minutes or until golden brown.<br>Remove from the oven.<br>Layer on browned potatoes:<br>Grated cheese of your choice, or combinations of cheeses<br>(you can make a mixture of what you like, cook meat and add veggies, meat of your choice (ham, browned sausage, diced chicken)<br>You can leave out the meat and do all vegetables, sun dried tomatoes, artichokes, grated squash, olives, mushrooms etc) chopped onions, sliced mushrooms, Chopped Diced Ortega chilies (opt.)<br>You can add all these ingredients or leave out any that you don\u2019t like.<br>In a bowl, beat together:<br>Evaporated milk or heavy cream, eggs, Salt and pepper, parsley<br>Pour egg mixture onto other ingredients.<br>Return to the oven and bake at 425\u2109 about 30 minutes, or until lightly browned, and a knife inserted 1\u201d from the edge comes out clean.
