{"id":586,"date":"2020-07-17T18:53:07","date_gmt":"2020-07-17T18:53:07","guid":{"rendered":"http:\/\/grandmaingrids.com\/frommykitchen\/?p=586"},"modified":"2020-07-17T18:53:07","modified_gmt":"2020-07-17T18:53:07","slug":"zucchini-fritters","status":"publish","type":"post","link":"https:\/\/grandmaingrids.com\/frommykitchen\/index.php\/2020\/07\/17\/zucchini-fritters\/","title":{"rendered":"Zucchini Fritters"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>1 pound or 2 medium zucchini<\/li><li>1 teaspoon of salt<\/li><li>1 Egg<\/li><li>1\/4 cup of parmesan<\/li><li>1\/4 cup of mozzarella <\/li><li>2 &#8211; 3 green onions diced<\/li><li>2 garlic cloves chopped<\/li><li>1\/2 cup flour<\/li><li>1\/2 teaspoon baking powder<\/li><li>salt and pepper to taste<\/li><li>2 tablespoons olive oil<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<p>Grate your zucchini and place in a bowl with 1 teaspoon of salt.  Let sit for around 10 minutes.  Then use a potato ricer, towels or a sieve to squeeze liquid out of the zucchini.   In a bowl add zucchini, egg, green onions, cheese and garlic. Mix well to combine.  Sprinkle flour, baking powder and spices over mixture and stir just to combine.  Heat olive oil in a fry pan on medium.  Make patties with your zucchini and fry for around 3 minutes per side until golden brown.  Don&#8217;t over crowd your pan (like grandma did in the video) Take fritters out of pan and put on a paper towel or a cooking rack.
