Ingredients
- 1/2 cup of dried fruit ( like apricots, blue berries, cranberries, apples)
- 3/4 cups of sugar divided
- 1 cup cold butter cubed
- 2 1/2 cups of flour
- 1 teaspoon extract (like almond extract, cream cheese extract, vanilla, rum)
- zest or citrus ( lemon, lime, orange)
- 2 tablespoons of juice of the fruit you zest
Directions
In a food processor add dried fruit with 1/4 of sugar. Pulse to make small pieces set aside. Combine in food processor flour and sugar and pulse to mix, add in cold cubed butter and pulse. Add in dried fruit and sugar and zest, pulse. Drizzle in juice and process until all combined and can be pushed together in your hand. Dump our onto a piece of plastic wrap and form into 2 logs about 2 inches in diameter. Place logs in the refrigerator for at least 2 hours up to 3 days. Freeze dough if not going to use in the 3 days. After dough has cold cut logs into disks and coat cookies with some sugar. Place on a lined sheet pan and bake in a pre heated 325 ℉ for around 12 minutes until light golden brown. You want a chew to them. They will get a little harder as they cool.
