Ingredients
- 1 cup of honey
- 1 cup of sugar
- 2 cups of peanut butter
- 5 cups of homemade granola
- 1 cup of chocolate chips (optional)
Directions
In a saucepan, bring the honey and sugar to a boil, stirring constantly. Turn off the heat and add the peanut butter and mix well. Pour mixture over homemade granola and mix well. Line a sheet pan with foil and spray with a non stick cooking spray. Pour the mixture onto the sheet pan and spread evenly with a rubber spatula. Place a piece of parchment paper over the granola and use the bottom of another sheet pan on the top and push down so your granola mixture gets nice and packed together.
Optional chocolate topping: While the mixture is still warm, sprinkle chocolate chips over the top and place another sheet pan upside down over the granola and leave for about 5 minutes. This will create a little oven that will melt the chocolate chips. Then remove the pan and use a small butter knife or spatula to evenly smear the chocolate around. Let cool for about 1 hour until the chocolate is hard, then remove and cut into small bars. Store then on the counter in an airtight container with parchment paper between the layers. They will stay good for a couple of weeks.
