Makes about 4 dozen cookies
Ingredients
- 1/3 cup of butter (softened)
- 1 pkg (3oz) of cream cheese (softened)
- ¾ cup of sugar
- 1 egg yolk
- 2 teaspoons of almond extract
- 2 teaspoons of orange juice
- 1 ¼ cups of flour
- 2 teaspoons of baking powder
- ¼ teaspoons of salt
- 5 cups of coconut flakes (divided)
- 1 bag (8oz) of chocolate kisses
Directions
Beat the butter, cream cheese and sugar in a large bowl until well blended. Add the egg yolk, almond extract and orange juice; beat well. In a separate bowl, stir together flour, baking powder and salt and then gradually add to butter mixture, beating until well blended. Stir in 3 Cups of Coconut.
Cover and refrigerate for 1 hour or until firm enough to handle. Remove wrappers from kisses. Preheat oven to 350’. Shape dough into 1-inch balls; roll balls in remaining 2 cups coconut. Place on an ungreased cookie sheet.
Bake for 10 to 12 minutes or until lightly browned. Remove from the oven; immediately press Kisses on top of each cookie. Cool 1 minute; carefully remove from cookie sheet to wire rack. Cool completely.
