Grandma Shows you how to make Baked Oatmeal in 1 large pan or in muffin pans. Makes a 9 x 13 pan or makes 24 muffins (12 scoop or 1/3 cup in each)
Preheat oven 350, bake 30 minutes
Ingredients
- 2 cups applesauce (plain, no sugar added)
- 5 eggs
- 2 1/2 cups brown sugar
- 5 teaspoon baking powder
- 2 1/2 teaspoons salt
- 1 teaspoon vanilla
- 2 1/2 cups milk
- 7 1/2 cups oats (long cooking not instant)
Directions
Mix together applesauce, sugar, eggs, add baking powder, salt, vanilla and milk mix well. Add oatmeal. Pour in greased 9 x 13 pan or scoop into well oiled (or sprayed) cupcake pans, or line with cupcake papers. Bake until toothpick comes out clean. These also freeze well.
Optional: you can top each one with raisins, nuts, chocolate chips or diced fruit if you want, fruit can be pushed right into the batter.
