Lemon Curd Cake

Preheat oven 350°

  • 1 box white cake mix (or lemon if available)
  • 1 cup of sour cream
  • ½ cup of oil
  • 3 eggs
  • 1 teaspoon of vanilla

Add all ingredients in a mixer beat for 2 minutes at medium speed. Spray 9 inch cake pans. I divide batter between 3 pans you can do it between 2 pans and cut the cake in half and have 4 layers. Bake for 35-40 minutes until the cake is done and a toothpick comes out clean. Let the cake cool completely before frosting.

Add 2 cups of heavy cream to a mixer and make whipped cream then add cooled lemon curd and mix ¾ cup with whipped cream.

Put a layer of whipped cream and a layer of lemon curd in between layers. Frost with whipped cream and add lemon curd on top.
