Ingredients for Cornmeal Topping
- 1 ¼ cup of yellow cornmeal
- 1 teaspoons of salt
- 2 ½ cups of water
- ½ teaspoon chili powder
Directions
In a saucepan add water and bring to a boil Add in the spices whisk together then add in cornmeal. Stir and cook until thick and stiff for about 10 minutes. Pat into a casserole pan reserve part to crumble on top of pie.
Ingredients for Filling
- 1 tablespoon of chili powder
- 1 onion diced
- Olives
- 1 pound ground beef browned
- 1 can of tomatoes
- 1 teaspoon salt
- ¼ teaspoon pepper
- 1 can whole corn or frozen corn
- 1 clove of garlic
- Diced ortega chilis
- 1 cup of shredded cheese divided reserve some to add on top
Directions
In a pan brown meat and drain off extra fat. Add onions and garlic and saute with meat. Add seasonings and other ingredients except cheese and heat. Line your cornmeal in your pan, mix cheese into meat mixture then pour into lined cornmeal pan. Cover the top with cheese.
Bake in a preheated oven at 350 ℉ for until internal temperature is 165 ℉ approximately 40-45 minutes. If the casserole is frozen, cover with foil until hot and remove foil for the last 15 minutes to brown up the cheese.
