Meat and Potato Quiche

Ingredients

  • 3 Tablespoons of vegetable/or olive oil
  • 3 cups of coarsely shredded raw potatoes (you can use frozen hash browns, best if thawed first)
  • Salt and pepper
  • 1 Cup grated cheese of your choice, or combinations of cheeses
  • ¾ to 1 cup meat of your choice (ham, browned sausage, diced chicken)
  • Or all vegetables, sun dried tomatoes, artichokes, grated squash, olives, mushrooms etc)
  • ¼ cup of chopped onions
  • ¼ cup of sliced mushrooms (opt.)
  • Chopped peppers (opt.)
  • Diced Ortega chilies (opt.)
  • 1 Cup of evaporated milk or heavy cream
  • 3 eggs
  • Salt and pepper, parsley

Directions

Mix together:
Vegetable/or olive oil and coarsely shredded raw potatoes (you can use frozen hash browns, best if thawed first) Salt and pepper
Press evenly into pie crust shape, in a 9 or 10 “ pie pan,
Bake at 425℉ for 20-30 minutes or until golden brown.
Remove from the oven.
Layer on browned potatoes:
Grated cheese of your choice, or combinations of cheeses
(you can make a mixture of what you like, cook meat and add veggies, meat of your choice (ham, browned sausage, diced chicken)
You can leave out the meat and do all vegetables, sun dried tomatoes, artichokes, grated squash, olives, mushrooms etc) chopped onions, sliced mushrooms, Chopped Diced Ortega chilies (opt.)
You can add all these ingredients or leave out any that you don’t like.
In a bowl, beat together:
Evaporated milk or heavy cream, eggs, Salt and pepper, parsley
Pour egg mixture onto other ingredients.
Return to the oven and bake at 425℉ about 30 minutes, or until lightly browned, and a knife inserted 1” from the edge comes out clean. Allow to cool 5 minutes before cutting into wedges.
