Ingredients
- ¾ teaspoons gelatin powder
- 6 ounces or 168 grams semi sweet chocolate
- 2 tablespoons granulated sugar
- 1 ½ cups cold heavy cream divided
Directions
In a small bowl, sprinkle the gelatin over water, let it stand for 5 minutes. Place chocolate and sugar in a medium bowl. Bring ½ cup of heavy cream to a simmer in the microwave 45-60 seconds. Then add the gelatin and stir until fully dissolved. Pour over the chocolate and whisk until chocolate is melted and the mixture is smooth. Cool temperature to room while beat the heavy cream, stirring occasionally. The mixture will thicken slightly.
In the bowl of your mixer fitted with the whisk attachment, whip the remaining 1 cup cream until soft peaks form, about 30 to 60 seconds.
Use a whisk to mix in 1/3 of the whipped cream into the chocolate mixture. Then fold in the remaining whipped cream into the chocolate mixture until no streaks appear.
Pipe the mousse into your favorite serving dish or use as a filling to your favorite cake.
