Frozen Fruit Cups

Ingredients

  • 1 small lemon
  • 2 cups of buttermilk
  • 1/2 cup of sugar
  • 1/8 teaspoon of salt
  • 2 cups of assorted fresh (or frozen ) fruit chopped (Strawberries, peaches, blueberries, leave whole, raspberries, mangos, blackberries)

Directions

Line muffin-pans with cup cake papers or small paper cups with a stick in them.

Into large bowl, zest lemon, add buttermilk, sugar, and salt whisk until blended. Gently stir in 1 1/4 cups fruit. Spoon mixture into muffin cups, top with remaining fruit. Cover and freeze until firm, about 3 hours.
