Learn to make Aunt Delores’ Carrot Cake. Grandma has been making her sister in laws carrot cake for over 53 years.
Ingredients
- 2 Cups of Flour
- 2 teaspoons of Baking Soda
- 2 teaspoons of Cinnamon
- ½ teaspoon of salt
- 3 eggs
- ¾ Cups of Oil
- ¾ Cups of Buttermilk
- 2 Cups of Sugar
- 2 teaspoon of vanilla
- 1 can crushed pineapple (drained well and juice saved for frosting)
- 2 Cups of carrots (shredded)
- 3 ½ oz of Coconut (1 cup)
- 1 Cup chopped nuts (opt)
Directions
Sift dry ingredients together then add wet combine and pour into a greased 9 X 13 or 2 cake pans. Cook at 350’ for 45-55 minutes until tooth pick comes out clean.
Turn out on a wire rack (if taking from the pan) and cool completely before frosting.
Frosting
- 8 oz. Cream cheese (room temp.)
- 1 cup powdered sugar
- 1 Cup cool whip (or 1 cup heavy whipping cream whipped for whipped cream)
- Pineapple juice to consistency to frost
