Caramel Cracker Bars

Ingredients

  • Saltine Crackers
  • 1 cup of butter
  • 2 cups of crushed graham crackers
  • 1 cup of packed brown sugar
  • 1/2 cup of milk (you can use canned milk or plant based if you don’t do dairy)
  • 1/3 cup of sugar
  • 2/3 cup of peanut butter or any nut butter
  • 1/2 cup of semisweet chocolate chips
  • 1/2 cup of butterscotch chips

Directions

Take a half sheet pan (cookie sheet) line it with foil and spray with cooking spray. Line bottom of the tray with saltine crackers covering completely. In a sauce pan melt butter, add in brown sugar, sugar, graham crackers and milk. Slowly bring to a boil. When boiling time for 5 minutes stir so it doesn’t scorch. Pour half of the caramel over the crackers and spread evenly. Line another layer of crackers then pour the rest of the caramel on and spread evenly. In the microwave of stove top melt chocolate chips and butterscotch chips. (in the microwave melt chips for 30 seconds remove and stir well then add peanut butter and microwave for 30 more seconds it should be all melted) Pour chips and peanut butter mix over caramel layer and spread evenly. Cover and put in the fridge to set for 1 hour. Remove from pan take of the foil and put on a cutting board. Cut and serve.
