Salty Sweet Butterscotch Pecan Cookies

Ingredients

  • 1 1/3 cups of toasted chopped pecans
  • 2/3 cups of packed brown sugar
  • 2/3 cups sugar
  • 1/2 cup of butter
  • 1/2 cup of shortening
  • 1/2 teaspoon of salt
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla
  • 1/2 teaspoon espresso powder
  • 1 3/4 cups butterscotch chips
  • 1 teaspoon of vinegar
  • 1 egg
  • 2 cups of flour
  • 1/2 cups sugar mixed with 2 teaspoons salt (for topping)

Directions

Toast your pecans 375℉ for 8 to 10 minutes. Beat until smooth sugars,butter, shortening salt, espresso powder, soda, vanilla and vinegar. Add egg beat until smooth, add flour mix then add chips and nuts. Chill the dough for 4 to 5 hours. Scoop out cookies i use a small 100 scoop. Then roll them in the salt sugar mix. Place on a cookie sheet with either parchment or a silpat baking mat. bake for 8 – 10 minutes in a preheated 375℉ oven. Cool on a wire rack.
