Buttermilk Biscuits and Chip Beef Gravy

Buttermilk Biscuits Recipe

Ingredients

  • 710 grams (5 cups) of all purpose flour reserve 1 cup
  • 8 grams (2 teaspoons) of baking soda
  • 24 grams (2 tablespoons) of baking powder
  • 10 grams (2 teaspoons) of kosher salt
  • 1 ½ cups of butter cold butter cut into small cubes
  • 1 ¾ cups of butter milk plus extra to brush on dough

Directions

Preheat the oven to 450 ℉. In a food processor add 4 cups of flour, soda, baking powder and salt. Give it a quick pulse to mix together. Add small cubed butter and pulse until coated with flour do not over mix. Then add the remaining cup of flour pulse for 15 seconds. Then pour in buttermilk. Mix just until it comes together. Dump dough out onto the lightly floured work station. Push dough together into a rectangle brush with butter milk. Then fold dough like a letter. Turn it 90 degrees and roll out into a rectangle brush with buttermilk. Do this 3 times then cut out biscuits into circles or cut into squares.  Handle dough as little as possible. Brush the top of biscuits with buttermilk and bake in a hot 450℉ oven. Bake for 10 minutes until golden brown.

Note: If you don’t have buttermilk add 1 tablespoon of lemon juice or vinegar to a 1 ¾ cup of milk.

Chip Beef Gravy Recipe

Ingredients

  • 1 – 2 oz package of chip beef
  • 4 tablespoons of butter flavored crisco
  • 4 tablespoons of flour
  • ¾ cup of evaporated milk
  • 2 cups of water
  • Salt and pepper to taste

Directions

Melt crisco in a frying pan. Cut beef into bite sized pieces then add to melted crisco. Cook slowly 1 to 2 minutes on medium – you don’t want meat crispy just to release some flavor. Add flour to make a roux stir cooking flour for 1 to 2 more minutes to get the flour taste out. Add 2 cups of room temperature water and stir until smooth consistency. After smooth add evaporated milk. Bring to a boil for about 3 minutes. Salt and pepper to taste. Serve over hot biscuits or toast.
