Ingredients
- 1 1/3 cups of toasted chopped pecans
- 2/3 cups of packed brown sugar
- 2/3 cups sugar
- 1/2 cup of butter
- 1/2 cup of shortening
- 1/2 teaspoon of salt
- 1 teaspoon baking soda
- 2 teaspoons vanilla
- 1/2 teaspoon espresso powder
- 1 3/4 cups butterscotch chips
- 1 teaspoon of vinegar
- 1 egg
- 2 cups of flour
- 1/2 cups sugar mixed with 2 teaspoons salt (for topping)
Directions
Toast your pecans 375℉ for 8 to 10 minutes. Beat until smooth sugars,butter, shortening salt, espresso powder, soda, vanilla and vinegar. Add egg beat until smooth, add flour mix then add chips and nuts. Chill the dough for 4 to 5 hours. Scoop out cookies i use a small 100 scoop. Then roll them in the salt sugar mix. Place on a cookie sheet with either parchment or a silpat baking mat. bake for 8 – 10 minutes in a preheated 375℉ oven. Cool on a wire rack.
