Aunt Delores’ Carrot Cake

Learn to make Aunt Delores’ Carrot Cake. Grandma has been making her sister in laws carrot cake for over 53 years.

Ingredients

  • 2 Cups of Flour
  • 2 teaspoons of Baking Soda
  • 2 teaspoons of Cinnamon
  • ½ teaspoon of salt
  • 3 eggs
  • ¾ Cups of Oil
  • ¾ Cups of Buttermilk
  • 2 Cups of Sugar
  • 2 teaspoon of vanilla
  • 1 can crushed pineapple (drained well and juice saved for frosting)
  • 2 Cups of carrots (shredded)
  • 3 ½ oz of Coconut (1 cup)
  • 1 Cup chopped nuts (opt)

Directions

Sift dry ingredients together then add wet combine and pour into a greased 9 X 13 or 2 cake pans.  Cook at 350’ for 45-55 minutes until tooth pick comes out clean.

Turn out on a wire rack (if taking from the pan) and cool completely before frosting.

Frosting

  • 8 oz. Cream cheese (room temp.)
  • 1 cup powdered sugar
  • 1 Cup cool whip (or 1 cup heavy whipping cream whipped for whipped cream)
  • Pineapple juice to consistency to frost
