Processing Pumpkins


Wash pumpkin. Cut into pieces and scrape seeds and strings out. Cube up the pumpkin and put it in a pot with a rack on the bottom with water up to the bottom of the rack. Steam pumpkin until soft. Make sure your pot doesn’t run out of water. Cook about 45 minutes.
In the instant pot or pressure cooker. Put cubed pumpkin in the pot with a rack. Add water just to the bottom of the rack. Manual cook for 10 minutes and quick release.
Take cooked pumpkin and blend up in blender or food processor until smooth.

Pumpkin Seeds

Seeds, Pumpkin, Sunflower etc

Wash seeds and put in a saucepan.  Cover with water.  For every cup of water add 3 to 4 teaspoons of salt.  Cover and simmer for 45 minutes.   Drain, dry and put on a cookie sheet lined with parchment paper.  Bake at 250°F for 45 minutes or until dry all the way through, or saute in butter

16 teaspoons salt = ½ cup

4 cups water = ½ cup salt
