Churro Cake


Ingredients (churros)

  • 1 cup of butter
  • 3 cups of water
  • 3 cups all purpose flour
  • 2 teaspoon salt
  • 12 eggs
  • 1/3 cup of sugar
  • 1 teaspoon of cinnamon

Ingredients (whipped cream)

  • 2 cups of heavy cream
  • 2/3 cups of powdered sugar
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of salt
  • chipotle powder for sprinkling

Ingredients (Vanilla pudding)

  • 1 Box of large instant vanilla pudding

Ingredients (chocolate)

  • 1/2 cup of dark chocolate chips
  • 1/4 cup of heavy cream
  • 1/2 teaspoon of chipotle powder
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of salt

Directions

Start with making churros. In a sauce pan, melt butter, add water, and bring to a boil. Add the flour, salt and cook for about 1 minute, stirring vigorously. Continue until dough comes together and doesn’t stick to the sides of your pan. Then quickly add to your stand mixer with a paddle. Turn mixer on and add 1 egg at a time to dough mixing and scraping between each egg so it is fully mixed in. After all the eggs are completely mixed in, place the dough into a pipping bag with a star shape tip on it. Place in the fridge for at least 30 minutes to cool off and stiffen up.

Turn oven on to 400℉. Decide what size cake you want to make. We recommend 10 inches. Draw a circle on parchment. Pipe one continuous spiral filling the circle. Repeat this 2 more times. Bake about 35-40 minutes until golden brown and puffed. You want them hard and crispy on the outside so your cake will hold up. Immediately sprinkle with cinnamon and sugar while the churros are still hot.

Make box of vanilla pudding according to directions on the box except cut the amount of milk down to 2 cups and refrigerate.

While cakes are cooling make your whipped cream. Add heavy cream to your mixer with the whisk attachment. Mix heavy cream until peaks form add in the sugar, salt and cinnamon.

For chocolate: In a microwave safe bowl add heavy cream and heat for 30 seconds until hot. Add chocolate chips and mix until all melted. Add in chipotle powder, cinnamon and salt.

Assemble the first cake and top it with a layer of vanilla pudding, whipped cream and chocolate. Place next cake and another layer of the pudding, whipped cream and chocolate. Then add the last cake and one last layer of pudding, whipped cream and chocolate. I then piped whipped cream to decorate the top of the cake. Sprinkle a little chipotle powder on the pipped whipped cream.
