Meatball Minestrone
Ingredients
- Spinach Meatballs or Italian Meatballs
- 1 large onion, chopped
- 4 cloves garlic, chopped
- 7 cups of beef broth
- 1 can of tomatoes
- 1 can of kidney beans
- ½ teaspoon of basil
- ½ teaspoon of oregano
- 1 cup of celery
- 1 cup of sliced carrots
- 1 large can of homey (Optional)
- mushrooms (optional)
- 1 cup of elbow or bow-shaped macaroni or any shape you like, cooked on the side or in soup.
Directions
In a large soup pot sauté onions until limp. Add carrots and celery, and garlic stir in the broth, tomatoes, beans drained and rinsed, add seasonings; cover and simmer 10 minutes. Add meatballs to soup and heat through add macaroni just before serving and cook until done. Or keep macaroni on the side cooked in separate pot and add to bowl and poor hot soup over noodles. It will keep the noodles from swelling too much and make soup better for leftovers.
