Banana Bread, Pumpkin or Zucchini Bread

Ingredients

  • ½ cup of butter flavored crisco
  • 1 cup of sugar
  • 2 eggs
  • 2 cups of flour
  • ¼ teaspoon of salt
  • 1 teaspoon of soda
  • 1 cup bananas about 3 bananas or 1 cup pumpkin or 2 cups well drained squeezed Zucchini
  • 1 teaspoon of vanilla
  • Optional ½ cup nuts or craisins

Directions

  • For pumpkin add 1 teaspoon Cinnamon ½ teaspoon cloves & nutmeg
  • For zucchini add zest from 2 oranges and craisins.
  • Makes one large glass loaf pan
  • Cream shortening and sugar until fluffy in a medium sized bowl. Beat in eggs 1 at a time beating well after each addition add vanilla and bananas.
  • Add flour, soda, and salt
  • Spray or butter pan and pour batter in. Optional add sprinkled sugar to the pan.
  • Bake at 350 ℉ for 1 hour or more until toothpick comes out clean
  • Cool for 5 minutes then turn out of pan
