Gazpacho

Ingredients

  • 4 large tomatoes seeded and diced
  • 2 large cucumbers 1 peeled 1 not, seed and dice both
  • 1 red bell pepper diced
  • 1/2 sweet onion diced
  • 1/4 cup of sherry vinegar
  • 2 teaspoons of black pepper
  • 1 quart clamato juice or tomato juice
  • 2 teaspoons of tabasco sauce
  • 2 tablespoons prepared horseradish
  • 6 green onions diced
  • 1 bunch cilantro
  • juice and zest from 2 lemons
  • 1 jalapeno chopped fine
  • avocado on the side

Directions

In a large bowl mix all ingredients together and let chill for 3 to 4 hours or overnight to develop the best flavor.

Variations

Add shrimp (already cooked) to it and make a delicious Mexican style shrimp cocktail
