Papa’s Famous Beef Jerky

Ingredients

  • 10-12 pounds Beef round roast (or any lean meat)
  • 1/4 cup of salt
  • 1/4 cup pepper
  • 3/4 cup of brown sugar
  • 1/4 cup onion powder
  • 1/4 cup granulated garlic
  • 1 1/2 cup soy sauce
  • 3/4 cup Worcestershire

Directions

In a small bowl combine all the ingredients except the meat. Stir to mix well. Freeze your meat long enough that its cold and hard but not too hard to slice it. Slice meat 1/4 inch thick with the grain if you want it long and stringy or against the grain if you want it easier to chew. If you have a little over or under the amount of meat it is ok to use the same amount of marinade. Place your meat in a zip bag and pour marinade over it. Put meat in the refrigerator and massage the bag and flip from time to time. Leave in 6- 24 hours to pick up more flavor. You can change up the marinade and add pepper flakes for heat or liquid smoke. This is the way we like it. Lay meat out on dehydrator sheets and leave some space between meat and make sure they are all laying flat. Turn dehydrator on to 160 degrees F to 165 degrees F. Leave for about 6 hours or until meat is all dry.
