Ingredients for Rolls
- 1 Tablespoon sugar
- 1 Package insta-yeast (1 Tablespoon)
- 1/4 cup water
- Add:
- 1/4 cup sugar
- 1 teaspoon salt
- 2 eggs
- 6 Tablespoons butter, melted
- 3 cups flour
- ½ cup sour cream
Ingredients for filling
- 2 Tablespoons butter, melted
- 1 cup coconut, toasted
- 2 Tablespoons grated orange rind, or more to taste
- ¾ cup sugar
Ingredients Glaze
- 3/4 cup sugar
- 1/2 cup sour cream
- 2 tablespoon orange juice
- 1/4 cup butter
Directions
Soften Yeast in warm water with 1 Tablespoon sugar, in mixing bowl. Stir in 1/4 cup sugar, salt, sour cream, eggs and 6 Tablespoons butter. Gradually add flour to form a stiff dough. Cover and let rise in a warm place until light and doubled in size, about 2 hours.
Combine 3/4 cup sugar, 1 cup coconut and orange rind, to make filling. Knead dough on well floured surface about 15 times. Roll out half of dough to a 12” circle. Brush with 1 Tablespoon melted butter. Sprinkle with half of mixture. Cut into 12 wedges, like a pizza. Roll up. Repeat with remains dough. Place rolls, point side down in buttered 13 X 9 pan in 3 rows. Cover and let rise until double. About 1 hour. Bake at 350’ for 25-30 minutes or until golden brown. Pour glaze over hot coffee cake. Serve hot or cold.
Glaze:
Combine in saucepan sugar, sour cream, orange juice and butter. Boil 3 minutes stirring constantly.
