Part Five: Crockpot Orange Chicken

Ingredients

  • ½ of an onion
  • 2 large carrots (peeled and sliced about 1/2-inch thick)
  • 2 large red or green bell peppers (cut into 1/2-inch chunks)
  • 3 cloves of garlic (finely minced)
  • 4 boneless skinless chicken breasts
  • 2 teaspoons of ground ginger
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • The juice of 3 oranges plus zest
  • Mandarin orange segments or fresh orange segments for garnish
  • 2 green onions (chopped)
  • Cooked rice

Directions

Put carrots, peppers, garlic, then the chicken, ginger, salt, pepper & orange juice in a Crockpot. Cover and cook on LOW 3 to 4 hours.Serve over top of hot cooked rice. Top with orange segments and green onions.


How to cook rice

Bring 3 cups of water to a boil add a pinch of salt. Stir in 1½ cups of rice, turn down to low and cook with the lid on for 20 minutes. Fluff with a fork and enjoy!
