Ingredients
- ½ of an onion
- 2 large carrots (peeled and sliced about 1/2-inch thick)
- 2 large red or green bell peppers (cut into 1/2-inch chunks)
- 3 cloves of garlic (finely minced)
- 4 boneless skinless chicken breasts
- 2 teaspoons of ground ginger
- 1 teaspoon of salt
- ½ teaspoon of pepper
- The juice of 3 oranges plus zest
- Mandarin orange segments or fresh orange segments for garnish
- 2 green onions (chopped)
- Cooked rice
Directions
Put carrots, peppers, garlic, then the chicken, ginger, salt, pepper & orange juice in a Crockpot. Cover and cook on LOW 3 to 4 hours.Serve over top of hot cooked rice. Top with orange segments and green onions.
How to cook rice
Bring 3 cups of water to a boil add a pinch of salt. Stir in 1½ cups of rice, turn down to low and cook with the lid on for 20 minutes. Fluff with a fork and enjoy!
