Ingredients
- 4 large tomatoes seeded and diced
- 2 large cucumbers 1 peeled 1 not, seed and dice both
- 1 red bell pepper diced
- 1/2 sweet onion diced
- 1/4 cup of sherry vinegar
- 2 teaspoons of black pepper
- 1 quart clamato juice or tomato juice
- 2 teaspoons of tabasco sauce
- 2 tablespoons prepared horseradish
- 6 green onions diced
- 1 bunch cilantro
- juice and zest from 2 lemons
- 1 jalapeno chopped fine
- avocado on the side
Directions
In a large bowl mix all ingredients together and let chill for 3 to 4 hours or overnight to develop the best flavor.
Variations
Add shrimp (already cooked) to it and make a delicious Mexican style shrimp cocktail
