Ingredients
- 1 pound or 2 medium zucchini
- 1 teaspoon of salt
- 1 Egg
- 1/4 cup of parmesan
- 1/4 cup of mozzarella
- 2 – 3 green onions diced
- 2 garlic cloves chopped
- 1/2 cup flour
- 1/2 teaspoon baking powder
- salt and pepper to taste
- 2 tablespoons olive oil
Directions
Grate your zucchini and place in a bowl with 1 teaspoon of salt. Let sit for around 10 minutes. Then use a potato ricer, towels or a sieve to squeeze liquid out of the zucchini. In a bowl add zucchini, egg, green onions, cheese and garlic. Mix well to combine. Sprinkle flour, baking powder and spices over mixture and stir just to combine. Heat olive oil in a fry pan on medium. Make patties with your zucchini and fry for around 3 minutes per side until golden brown. Don’t over crowd your pan (like grandma did in the video) Take fritters out of pan and put on a paper towel or a cooking rack. Serve with yogurt dill sauce.
Yogurt Dill Dipping Sauce
Ingredients
- 2 cups plain
- 1/2 cup of fresh dill
- juice and zest of one lemon
- 2 cloves garlic minced
- salt and pepper to taste
Directions
Combine all ingredients in a bowl and add more seasoning as needed.
