Potato Yeast Bread

Ingredients

  • 1 1/2 cups of flour
  • 1 3/4 cups of flour
  • 2 tablespoons of sugar
  • 2 1/4 teaspoons of yeast
  • 2 teaspoons salt
  • 1/2 cup mashed potatoes
  • 1/2 cup milk
  • 1/4 cup of butter
  • 1/4 cup of potato water or water if you forgot to save it
  • 1 egg
  • 1 tablespoon of oil

Egg wash ingredients

  • 1 egg
  • 1 tablespoon milk

Directions

In the bowl of your mixer with paddle attachment add 1 1/2 cups flour, sugar and yeast. Mix it together a little. In a sauce pan melt the butter then add milk and potato water heat to 120℉ then add your potatoes check the temperature make sure it is between 120℉ and 130℉ if you go hotter than that it will kill your yeast. Add to the mixer with the flour and yeast and sugar. When this is mixed good add your egg and keep mixing until it is incorporated. Measure out 1 3/4 cups of flour and add salt to it and mix salt in then add that slowly to the mixer and mix good. Switch to the dough hook attachment and knead dough for 10 minutes. If you don’t have a dough hook you can knead by hand for 15 minutes. In a bowl add 1 tablespoon of oil I use vegetable oil. Bring dough together into a ball and put in bowl with oil then flip it over so oil gets on the other side. Cover with a towel and let rise for 45 minutes. You want it to double in size. If it is really hot or cold you may need to adjust the time. Then shape your dough into a loaf shape as shown in the video. Spray a 9 x 5 loaf pan with cooking spray and place dough in pan cover with a towel and let rise for 30 minutes. Make your egg wash. By mixing milk and egg in a bowl. Make 3 slits in the top of your bed loaf then brush egg wash on top. Put loaf in a preheated 350℉ oven and bake for 40 minutes. I cook 20 minutes then rotate and cook another 20 minutes. The temperature should be 190℉ when bread is done. Take bread out and let it cool in the pan for 15 minutes and then dump out on a wire rack.
