Chicken Marsala & Garlic Mashed Potatoes

Ingredients

  • 4 Boneless, skinless chicken breast halves or thighs
  • 1 small onion diced
  • 2 cloves garlic diced
  • ½ pound fresh mushrooms
  • 2 eggs
  • 3 Tablespoons of Flour
  • Seasoning to taste
  • 4 Tablespoons of butter
  • 1 Tablespoon of oil
  • 3 Tablespoons of Marsala wine (dry)
  • 2 Cups of beef broth or chicken broth
  1. Pound chicken breasts from center out to a ½ inch thickness
  2. Peel and chop the onion and garlic.  Wash, pat dry and slice the mushrooms.
  3. Lightly beat the eggs in a shallow bowl.  Put the flour in another shallow bowl and season to taste.  Dip the chicken breasts in the egg, then dredge them in the flour, shaking off any excess.
  4. Melt 2 Tablespoons of the butter with the oil in a large skillet.  Cook the chicken until it is lightly browned, about 4 minutes per side.  Remove the chicken and keep it warm.
  5. Add the onion, garlic and mushrooms and sauté until they are lightly browned, 3 to 5 minutes.  Return the chicken to the skillet and stir in the Marsala (de glaze the pan, stir to get up all the little goody bits on the bottom) and then add the Beef broth.  Bring the mixture to a boil, reduce about one-third, about 4-6 minutes.
  6. Whisk the remaining butter into the marsala mixture until well blended.
  7. Serve with mashed potatoes, buttered noodles or rice.  Asparagus and a green Salad make a great combination, don’t forget the bread.
Garlic Mashed Potatoes

Ingredients

  • 2 1/2 pounds of small read potatoes
  • 5 cloves of crushed garlic
  • 1 tablespoon chicken bullion
  • water to cover potatoes
  • salt and pepper to taste
  • 4 ounces cream cheese
  • 1/4 cup of butter
  • 1/4 cup heavy cream (or milk)

Wash and quarter potatoes add garlic and chicken bullion. Cover potatoes with water and boil until a potato will slide off a knife when poked approx 30 minutes. Drain water and save it for your gravy. To hot potatoes add butter, cream cheese, heavy cream and pepper to season. Mash potatoes to the consistency you like. Taste for seasoning add salt if needed. If you are doing a head of time put in a crock pot and put on keep warm. Stir from time to time.
