Grits and Sausage Breakfast Casserole

Ingredients

Prepared Grits
1 ½ cups of shredded mexican cheese (for grits)
⅓ cup chopped cilantro
1 pound breakfast sausage (italian sausage is also delicious)
1 tablespoon of olive oil
1 chopped onion
4 bell peppers (1 of each red,yellow,orange and green)
3 cloves chopped garlic
½ cup shredded mozzarella cheese
Salt and pepper to taste

For vegetarian casserole, leave out sausage and add chopped zucchini and spinach in its place.

Directions

Preheat oven to 425 ℉ Prepare grits  according to our grits recipe linked above. In a large frying pan cook sausage. Remove sausage and set aside. In the same pan add olive oil and onions, peppers, garlic. Saute up until soft.  Add back in sausage and let all the ingredients mix together. Turn off heat and add cilantro.  In a casserole press half the grits in the bottom. Spreading evenly. Add sausage mixture on top of grits. Sprinkle mozzarella cheese on mixture then add the rest of the grits on top and sprinkle with a little more cheese.  Bake until hot all the way through about 15 minutes or if made ahead of time will take longer possible 1 hour you want the internal temperature to be 160 ℉. When the casserole is hot all the way through, the cheese should be nice and golden. You may want to turn on your broiler and brown it up a little.
